Swampscott getting a taste of the international

SWAMPSCOTT-In a couple of months, area residents could have the chance to sample new world fusion cuisine at G Bar and Kitchen on Humphrey Street.Swampscott resident Gregg Brackman, who is the owner of the new establishment, is already in the process of renovating the building at 256 Humphrey St., which formerly housed the Ufirst Day Spa.?It was a complete gut job right down to the floor joints and studs,” he said. “Everything will be brand new. We’re installing big windows to let in lots of light. It’s going to be beautiful.”Brackman said the new restaurant would accommodate 30 people in the dining room and an additional 10 people at the full service bar.Brackman, 34, said G Bar and Kitchen is a dream come true.?I’m very excited to see my dream unfolding,” he said. “This has been a lifelong dream for me. I started working in restaurants when I was 15 and opening my own place is something I’ve always wanted to do.”Brackman, who is a graduate of Johnson & Wales College of Culinary Arts in Rhode Island, said he put himself through school working as a cook.?I have done everything in the business,” he said. “My degree is in hotel/restaurant management so I know the management side of the business too. I used to own a catering business and I worked as a private chef on a $26 million yacht.”Brackman said the menu is what he likes to call “new world fusion” and it is almost as eclectic as his background.?It’s a fusion of Italian, French, Asian and American,” he said. “I’ll use dishes that have worked for me over the years.”Brackman said the menu would change frequently so he could utilize the freshest local ingredients possible. A sample menu provided byBrackman included 3-day brined pork loin with spicy apples, whipped potato and braised baby bok choy along with a wide assortment of appetizers, entrees, side dishes and desserts. The entrees average $25 each.Brackman said he has no doubt G Bar and Kitchen would be successful because he is offering a quality product at a moderate price.?It’s all about the passion,” he said. “As long I have that passion and maintain consistency I know I’m going to be successful.”
