Trinidad & Tobago: Curried Crab & Coconut Dumpling
Silky crab in warm spices over coconut dumpling purée with pepper oil and crisp garnish.
Dominican Republic & Haiti: Braised Goat & Coconut Rice Cake
Goat slow-cooked in Haitian epis & Dominican agrio atop a crispy rice cake, finished with pikliz crema.
Jamaica: Jerk Oxtail & Breadfruit Purée
Tender oxtail glazed with tamarind jerk jus, served over roasted breadfruit and topped with a thyme chip.
Puerto Rico: Crispy Pork Belly Mofongo & Sweet-Spicy Broth
Chicharrón on garlic mofongo with a sweet, spicy broth of ají dulce, honey, and chili — rich and balanced.
Dessert: “Islas Unidas”
A four-island finale featuring Dominican majarete, Jamaican rum cake crumble, Puerto Rican guava-tembleque, and Haitian pen patat brûlée.
